Most of which we also share on our YouTube Channel, as well as our second instagram account, & TikTok. 🍒✨ Maple Syrup Orange Cranberry Sauce | Fresh & Easy
You have no excuses to use canned gelatinous cranberry sauce - making your own is super easy and you'll never go back to canned!! Watch how easy it is: https://youtube.com/shorts/b57pDkBj3Xc?feature=share Growing up with Dutch parents, we always had homemade applesauce on the table for Thanksgiving and Christmas—a bright, refreshing contrast to all the rich dishes. So years later, when I watched Bobby Flay whip up cranberry sauce on TV and tried it myself, I had that same aha

Apple Crisp Recipe (2 ways)
With apple season finally here (we got some yummy apples from Lee & Maria's this week, and also picked out first apple from our new Honeycrisp tree in our backyard!) I've dusted off my mom's old apple crisp recipe, and given it a gluten-free, refined-sugar-free overhaul. Hope you like it! I make it two different ways: 1. As one bigger crisp: This makes enough for a 8x8 baking dish, and is great for sharing. For that, we like to bake it in a square 8x8 pyrex baking dish. 2. On

Grain-Free, Corn-Free Sorghum "Popcorn"
Photo: organic air-popped popcorn (left), with organic pan-popped sorghum (right). If you're looking for a grain-free/corn-free alternate to popcorn, give this recipe a try! It uses organic pseudo-grain sorghum in place of corn kernels, for a healthier alternative, and uses pretty much the same technique as stove-top popcorn. (We tried in the air-popper but the sorghum kernels are so light, they flew out before popping). Have you heard of sorghum? It's a nutrient packed pseud

Our Favourite Roasted Pumpkin Seeds
Ever wonder what to do with all those seeds (after you've carved your Halloween pumpkins, or made some pumpkin pies)? Every Halloween we try different recipes roasting the pumpkin seeds. This year, this was the winner! We tried several different recipes from adding paprika & garlic powder, to everything bagel spice, to these guys. The secret... white vinegar! These were an attempt to make salt & vinegar flavoured pumpkin seeds (cuz our kids love S&V potato chips). And althoug

"Oats are mischievous"
You know I love listening to podcasts. From health, to food, to parenting & kids, to business; I listen to sooo many. Last week Dr. Steven Gundry (the author of some really great books like Plant Paradox, Energy Paradox, etc) spoke about oats. He called them "mischievous". Most of us know that there can be cross contamination between oats and gluten, since farms will use the same processing equipment to harvest their grains. This is why gluten-intolerant people are told to lo

Let’s Talk Cashews (And Poison Ivy?)
Although cashews can make a great, creamy, dairy-free substitute (great for making “cheese” sauces or “cheese”cakes or super creamy “nice” cream, we don’t use cashews (or peanuts) at our bakery and here’s why: Cashews are the second most common nut allergy out there, second to - you guessed it - peanuts. What’s funny, is neither peanuts nor cashews are actually nuts. Peanuts, which actually grow underground, are considered legumes. And cashews are botanically considered a “dr

Ingredient Spotlight - Cassava & Tapioca
We’re back for another ingredient spotlight this week! We get so many questions about our flours, since we don’t use the typical gluten-free flour blends with rice, or potato, or oat flour. At our bakery, we use varying ratios of almond flour, coconut flour, cassava flour, and tapioca flour to get different textures for our baked goods. But what exactly is cassava flour and tapioca flour? And where does it come from? Tapioca and cassava come from the same plant - a plant call

Ingredient Spotlight - Almond Flour
Almond flour is a common and popular substitute in wheat-free baking. It’s low in carbs, packed with nutrients and has a slightly sweeter taste. Almond flour may also provide more health benefits than traditional wheat flour, and it’s a very important ingredient here at Mary’s Mindful BakeHouse, as our main grain-free/gluten-free flour. Almond flour is made from ground almonds , after blanching and sifting to remove the skins, and results in a fine flour. Almond meal, on the

Ingredient Spotlight - Canadian Maple Syrup
One of our most commonly used ingredients (right after almond flour and tapioca) is organic maple syrup. We use it as a sweetener, a healthier replacement for processed sugars, but did you know it has health benefits too? Pure maple syrup is high in anti-oxidants and anti-inflammatory properties. FUN FACT: It has the same anti-oxidants and anti-inflammatory properties as green tea!! It contains nutrients like: Manganese that helps in energy production. Riboflavin that helps

Chocolate Avocado Breakfast Pudding
Creamy, chocolatey pudding, made easy with only 3 ingredients. Add some optional toppings for crunch, and you’re all set for a sweet-tooth-satisfying breakfast, full of healthy fats to keep you full until lunch. I love to make a bunch of these and freeze them for easy on-the-go breakfasts, when I don't have time to make something (Farmer's Market mornings!!). It's also great for when all your avocados and bananas go ripe at the same time, and you don't know what to do with th

DIY Tortilla/Pita Chips Recipe
Sticking with this week's "Creation Giveaway" theme, these make-your-own pita/tortilla chips are so quick & easy, you can make them in your oven in the time it takes to reheat leftover curry/soup. Or use them with your favourite dip or humus!! I don't know about you, but I totally miss corn. I used to put corn in my soups, our chili, and tortilla chips with salsa, dips or guac is just awesome. (And fresh Lafferty's corn on the cob!!! OMG. Don't we have the best corn here in E

Healthier Sugar Swaps to Start 2022
These days we are completely overrun with refined sugar. Not just in the obvious places like sodas, fruit drinks and candy, but it also hides in processed foods and pasta sauces, and all sorts of places you wouldn’t even think to look. The average child today consumes way more than the recommended limit of 25 grams (or 6 teaspoons) a day!! Refined, added sugars can lead to sugar cravings & weight gain, energy crashes & metabolic diseases, headaches, inflammation, and many oth

Holiday Baking? Here's our favourite staple ingredients & where to get them.
High quality ingredients we love. If you're planning out some gluten-free baking over the holidays, but don't know where to find some of the ingredients, we're sharing all our favourite brands for paleo home baking. FLOURS: 1) Almond flour - Kirkland brand: here at the bakery, we love Costco almond flour. Every few months, I search for newer/better brands, but Costco always wins out. Note: almond meal is not the same as almond flour in a recipe. Almond meal included the skin

Easy Fruit Jam
This is our easy berry jam that we use for our amazing pistachio thumbprint cookies. Only 3 ingredients, and so super easy, fresh & delicious! Tweak the syrup amount if you want it more or less sweet. When I make it for myself (to top my waffles - get my waffle recipe here ), I totally leave it out. What you need: I cup of berries (fresh or frozen) - for our thumbprint cookies, we use all raspberries. When I make it for waffles I love a combo of cherries and blueberries. But

Homemade Paleo Waffles (vegan option)
While my kids love pancakes ( you can try our pancake recipe here ), I've always been a sucker for French toast or waffles. So I adapted our easy gluten free, grain free, vegan pancake recipe to work in our waffle iron and make super tasty breakfast waffles. This one is a little trickier and has a few extra ingredients than the pancake recipe, but its totally worth it! You will need: 2 cup almond flour 2 tbsp coconut flour 1 tbsp cassava flour 1/4 cup tapioca flour 1 tbsp bak

Easy Homemade Coconut Whipped Cream
Here’s a delicious, yet simple plant-based recipe for whipped cream. Over here we add it to EVERYTHING from hot chocolates & lattes, to pies & ice cream, and pancakes & waffles . If you prefer it less sweet, you can leave out the syrup (or add a bit more, if you like it sweeter!). You will need: A 400mL can of full fat coconut milk or coconut cream (if you’re sensitive to soy, find a brand that does not have additives), chilled in fridge overnight. 2 tbsp pure maple syrup 1
