💚🍨 Day 25 of Healthy Summer Treats | Pistachio Ice Cream Bars
Today we’re making creamy pistachio ice cream bars that feel super decadent but are SOOOO easy to make. Ice cream bars: 1 can full fat coconut milk 1/2 cup pistachios, shelled 1/4-1/3 cup maple syrup (or sweetener of choice) 1 tsp vanilla For dipping: 3/4 cup dark chocolate 1 tbsp coconut oil 1/4 cup pistachios, shelled & crushed Just dump everything in your blender, blend until smooth, then freeze in your popsicle molds. Quick & Easy "Dubai Pistachio Cups" - the cheat code ;)
The long/proper way is definitely amazing, but I'm all for making things easier & more accessible. No molds! No chopping or toasting. No phyllo or gluten!
