💚🍨 Day 25 of Healthy Summer Treats | Pistachio Ice Cream Bars

Today we’re making creamy pistachio ice cream bars that feel super decadent but are SOOOO easy to make.
Ice cream bars:
1 can full fat coconut milk
1/2 cup pistachios, shelled
1/4-1/3 cup maple syrup (or sweetener of choice)
1 tsp vanilla
For dipping:
3/4 cup dark chocolate
1 tbsp coconut oil
1/4 cup pistachios, shelled & crushed
Just dump everything in your blender, blend until smooth, then freeze in your popsicle molds. After freezing, dipping in melted dark choc, and sprinkle with some crushed pistachios, then enjoy!!
