We planted a veggie garden this year, as always, but I feel like each year the wild animals ransack it more and more!!!
We have been growing strawberries for YEARS and have yet to get to eat a single one. Every year we try a new tactic, wire/mesh, hanging baskets, etc, and they always get found... lol.
And the squirrels like to steal all the green tomatos, take a bite and leave it in our grass. The wild rabbits happily found our lettuce garden. I watched from the window as they so quickly gobbled it up (it looked too happy to scare it away).
Long story short (TL/DR) this butternut squash was one thing we got to actually pick & eat (though it barely escaped the squirrels!!).
We sliced it up, breaded and baked it. It's especially yummy dipped into a spicy mayo!!

Ingredients:
-1/2 of a large butternut squash*
-1/4 cup tapioca flour
-2 eggs
-1 cup almond flour (or gf bread crumbs)
-1/2 tsp fresh sage, chopped (or 1/4 tsp dried)
-1/2 tsp fresh rosemary, chopped (or 1/4 tsp dried)
-1/4 tsp dried granulated garlic
-1/4 tsp dried granulated onion
-1/4 tsp sea salt
-Olive oil or avocado oil cooking spray
*we used just the top portion of the squash to get nice circles, but you could double the recipe and de-seed & slice the rest up too. Or save the bottom portion to cut into chunks to roast or add to a soup.
Steps:
-Preheat oven to 400°F
-Line a baking sheet with parchment, and if you have an oven safe cooling rack, place that on top of your baking sheet. This will allow air to circulate around the butternut squash pieces while cooking and let them get crispier
-Peel your butternut squash, then slice thinly
-Next set up your breading station: add the tapioca to a medium bowl
-Add eggs to second medium sized bowl, and whisk
-Combine remaining ingredients in a third medium sized bowl and stir until spices are distributed
-Take one slice of squash at a time, coat it in tapioca (tapping off the excess), dip in egg, then coat in breading, and place on baking sheet. Repeat until all pieces are coated.
-Lightly spray with avocado or olive oil, then bake for 15 minutes, flip the pieces with tongs or a spatula, spray with oil, then bake for 15 more minutes until golden.
-Let cool slightly (the insides will be very hot!), then enjoy!!
