Healthy 3-Ingredient Rice Crispy Squares
With maple syrup and almond butter, I thought these would be perfect for my kid with braces (instead of sticky marshmallows) & bonus you get to avoid over processed ingredients like corn syrup, they come together super quick, and are endlessly customizable (sub your fav cereal, a diff nut/seed butter or sticky sweetener of choice!!). They have a similar texture but without the sticky pull. I was quite impressed, though I felt like they took much longer than 30 minutes to set

Quick & Easy "Dubai Pistachio Cups" - the cheat code ;)
The long/proper way is definitely amazing, but I'm all for making things easier & more accessible. No molds! No chopping or toasting. No phyllo or gluten! I made these easy blender waffles/pancakes at the bakery this week, while hanging out with my daughter. She likes pancakes, and I prefer waffles so this batter does double duty, and can easily do both!! Toss it all in a blender, and you're ready to go.
