Healthy 3-Ingredient Rice Crispy Squares


With maple syrup and almond butter, I thought these would be perfect for my kid with braces (instead of sticky marshmallows) & bonus you get to avoid over processed ingredients like corn syrup, they come together super quick, and are endlessly customizable (sub your fav cereal, a diff nut/seed butter or sticky sweetener of choice!!).


They have a similar texture but without the sticky pull. I was quite impressed, though I felt like they took much longer than 30 minutes to set in the fridge, so I popped ours in the freezer.


NOTE: to technically be vegan, you have to use an off brand rice cereal that does not fortify with vitamins (Vitamin D3 is usually sourced from lanolin, from sheep). But if you’re just avoiding gelatine, or corn syrup, etc, then the brand name stuff is just fine.


INGREDIENTS:

1/2c maple syrup

1/2c almond butter

2c crispy rice cereal


1. Combine syrup and nut butter in a bowl and warm in microwave until you can stir them together nice and smooth.

2. Then add your cereal and mix

3. Spread in an 8x8 pan, and then pop in the fridge for 30 minutes before cutting (I found they needed much longer - I stuck ours in the freezer - perhaps our almond butter is runnier, but they still turned out pretty good)
