Banana Oat Cookies  | 3-Ingredients, Healthy & Vegan 🍌🍪 


The easiest cookie on the internet—and yes, it’s healthy, vegan & gluten-free ✨

These banana oatmeal cookies are made with just 3 simple pantry ingredients, no added sugar, and come together in minutes. Soft, chewy, naturally sweet, and perfect for breakfast, snacks, or a guilt-free dessert.


Two ways to make them:Version 1: Chewy breakfast cookies• Version 2: Best texture (add nut butter for richness!)


💡 Pro tip: Quick oats = better texture! You can also mix quick oats with rolled oats or oat flour for extra chew.

VERSION 1: breakfast cookie chewy

  • 2 ripe bananas, about 1 cup mashed

  • 1 cup quick oats*

  • 1/4 cup chocolate chips


VERSION 2: best texture

  • Above plus 1/4 cup nut butter

  

OTHER OPTIONS:

  • Optional 1/4 tsp vanilla, 1/4 tsp cinnamon, pinch sea salt


Instructions 

  • Preheat your oven to 350F and line a baking tray with parchment paper.

  • In a bowl, mix mashed bananas and oats (& nut butter if using)

  • Then, fold in chocolate chips.

  • Scoop out 1 tbsp sized balls onto lined baking tray.

  • Gently flatten - they do not spread during baking

  • Bake for 14-16 minutes
