🍨🥒 Zucchini Ice Cream | No Churn | Dairy Free/Vegan
Refreshing, lightly chocolate flavour with cinnamon undertones that pairs so well with our zucchini oatmeal cookies. Feel free to leave out either, or add a bit more cocao to make it more chocolatey. Because we planned to use these for ice cream sandwiches with our oatmeal cookies, I didn’t want the choc to overpower the cookie flavour. This paired really nicely together. Today we’re making a 3-ingredient, 5-minute, no bake, 12-layer strawberry icebox cake. All you need is whipcream, graham crackers and fresh strawberries. After you’ve layered your icebox cake, it simply chills in your icebox (aka fridge) until the cookies have softened (about 3-4 hours or overnight). It’s perfect for a summer party or picnic.
