🍏Date-Caramel Apples | no cook & refined sugar free #FallIntoShorts Day 6

Juicy crunchy Granny Smith apple coated in a layer of ooey-gooey smooth date-caramel, dipped in crushed pecan/walnuts & drizzled with dark chocolate - who needs a store-bought caramel apple?!?!
Caramel:
1.5 cups (323g or about 18 dates) medjool dates, pitted
1/4 cup (67g) cashew/almond butter (or sub your fav nut/seed butter)
1/4 cup 78g) maple syrup
2 tbsp (32g) coconut oil, melted
1 tsp vanilla
1/4 tsp sea salt
Apples:
Apples of choice washed and dried (we love a nice sour apple for this like Granny Smith)
Candy/lollipop sticks or popsicle sticks
Crushed pecans/walnuts
Dark chocolate of choice
This size batch of caramel will make 4-6 candy apples
Instructions:
-Combine caramel ingredients in a food processor and blend until super smooth. Stop and scrape down sides every now and then.
-At this point I spread it in a lined loaf pan and froze it to cut into 18 squares to make chewy caramels, then used 4 of those squares to make our caramel layer
-But you can skip that step and just scoop a few tablespoons of your fresh made caramel onto parchment and roll out to a thin layer, then chill it to make it more handleable.
-Carefully peel back the top parchment paper and place your washed/dried/sticked apple in the centre
-Carefully fold the caramel up around your apple & peel back the parchment
-Roll/dip in crushed nuts of choice, and drizzle with melted chocolate of choice
-Enjoy!! (Or slice off the core & enjoy as slices!)
