I’m sure you’ve seen crunchy, roasted chickpeas before. But this is a fun twist. Plus, they’re extra crunchy and give you more protein & less carbs (net and total), and more fiber per serving than chickpeas (or croutons!) And bonus: they’re also faster to cook from scratch; giving you a healthy, gluten-free alternative to a crouton on your salads this summer (or frankly to any dish you’d like to add some texture, crunch and/or extra protein too) INGREDIENTS: ► 3/4-1 cup dried
