Healthy Nuts & Seeds Granola | Oat-Free, Grain-Free, Vegan

I made myself a new batch of granola yesterday in between sourdough batches (luckily it’s super quick to put together and fits in my air oven so it doesn’t take up one of my big bakery ovens).
This is my current “granola” obsession that I like to throw on my n’oat oatmeal, chia pudding or chocolate tofu pudding for a crunch factor. I really like the hearty-ness the almond butter adds, and all the chia seeds too. Feel free to double or triple this batch, and make 2 trays worth at a time. It freezes really well too.
Nuts & Seeds:
3/4 cups pumpkin seeds
1/2 cup walnuts
1/2 cup almonds
1/4 cup chia seeds
1/4 cup flaxseeds
1/4 cup coconut (desiccated, flakes, chips, or a mix)
pinch salt
Wet:
3 tbsp + 1 tsp maple syrup
1 tbsp almond butter
1 tbsp coconut oil, melted
1 tsp vanilla
1 tsp cinnamon (leave out if you like)
Mix-Ins:
1/2 cup organic dried cranberries, raisins, or your favourite chocolate chips
Instructions:
Combine wet ingredients & cinnamon in a medium mixing bowl, and mix until well combined
Add nuts, seeds and salt and toss until well coated/distributed
Spread on lined baking sheet & bake/dehydrate at 195F for 60 minutes (no stirring required)
Remove & let cool. Break up big chunks if desired & add optional mix-ins.
Transfer to air-tight container
Enjoy as a snack or as a crunchy topping on your favourite breakfast (n’oat oatmeal, chia pudding or chocolate tofu pudding).
