Crispy, crunchy, roasted lentils šš„ #Saladtopper #glutenfreecroutons

Iām sure youāve seen crunchy, roasted chickpeas before. But this is a fun twist. Plus, theyāre extra crunchy and give you more protein & less carbs (net and total), and more fiber per serving than chickpeas (or croutons!) And bonus: theyāre also faster to cook from scratch; giving you a healthy, gluten-free alternative to a crouton on your salads this summer (or frankly to any dish youād like to add some texture, crunch and/or extra protein too)
INGREDIENTS:
āŗ 3/4-1 cup dried lentils of any kind, except red (I used 1c dried brown lentils)
āŗ Olive oil, drizzle (or oil of choice)
āŗ Sea salt (I used about 1/2 tsp)
āŗ Spices (I used about 1/2 tsp granulated onion, granulated garlic and paprika.
STEPS:
1. Cook your dried lentils according to the package direction then drain and rinse (or drain and rinse a can of lentils)
2. Transfer drained/rinsed lentils to a clean kitchen towel to dry them (this helps the oil to stick better and gets them crispier)
3. Transfer to a lined baking sheet
4. Drizzle with olive oil to lightly coat them (or you could use a spray)
5. Sprinkle with salt and season/spices as desired
6. Bake at 400F for 10min, then stir, bake another 10min and stir again. At this point they may be done or close to done. If you want them even crispier, you can pop them back in the oven for another 5-10 minutes. NOTE: They will also crisp up more as they cool.
