2-Ingredient Banana Coconut Macaroons
This is an 2 ingredient recipe I can get behind - Ingredients 1/2 large ripe banana (the other half was too far gone even for banana bread 😅) 1/2-3/4 cup unsweetened shredded coconut Instructions Preheat oven to 350°F (175°C)  and line a baking sheet with parchment. In a bowl, mash the banana until smooth . Stir in the shredded coconut until it forms a thick, sticky dough. Scoop tablespoon-sized mounds onto the baking sheet. Press slightly to shape (they don’t spread much).

3-Ingredient Coconut Macaroons
GF • Dairy-Free • Refined Sugar-Free • Low Carb • Vegan Option Chewy coconut dreams — just 3 ingredients! Ingredients 30g aquafaba (or 1 large egg white), room temperature 4–6 tbsp granulated or powdered sweetener of choice (allulose, monkfruit, coconut sugar, etc. I used 4 tbsp allulose for an under-sweetened treat - use more for a sweeter macaroon) 3/4 cup shredded coconut (add +2 tbsp only if the dough feels too wet) – I used fine, unsweetened dried coconut but medium work
