3-Ingredient Coconut Macaroons

Chewy coconut dreams — just 3 ingredients!


Ingredients


  • 30g aquafaba (or 1 large egg white), room temperature

  • 4–6 tbsp granulated or powdered sweetener of choice (allulose, monkfruit, coconut sugar, etc. I used 4 tbsp allulose for an under-sweetened treat - use more for a sweeter macaroon)

  • 3/4 cup shredded coconut (add +2 tbsp only if the dough feels too wet) – I used fine, unsweetened dried coconut but medium works even better!!


Optional Topping

  • Melted chocolate of choice, for dipping or drizzling


Instructions


  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment.

  2. Whip the binder: In a bowl, whisk aquafaba or egg white until foamy.

  3. Sweeten: Add the sweetener and continue whisking until the mixture is thick, shiny, and forms soft-to-medium peaks.

  4. Fold: Add shredded coconut and fold until a sticky dough forms.

    • Add +2 tbsp coconut only if needed.

  5. Shape: Scoop into 1-inch mounds and place on the prepared tray.

  6. Bake: 13–17 minutes, or until edges and bottoms are lightly golden.

  7. Cool: Let cool on the tray for at least 5 minutes—they firm as they set.

  8. Finish: Dip bottoms or drizzle tops with melted chocolate if desired.

  9. Enjoy! Chewy centers, crisp edges, coconut bliss.
