Brownie Box Mix Chickpea Hack | Vegan, Egg-free Oil-Free Brownie Swap

Let’s try the hack where you use a can of chickpeas in place of the oil/water/eggs called for on your box mix brownies to make egg-free/vegan brownies. It also significantly changes the macros (see chart below ⬇️)


Please refer to your brownie box mix ingredients if you need it to be fully vegan - the simple mills box mix we used was vegan




You need:

-Standard sized Brownie Box Mix (to make a 8x8 or 9x9 brownie)

-1 can of chickpeas


Steps:

1. Drain & rinse your chickpeas, then add to a blender/food processor

2. Measure out your water - however much oil the box instructs calls for, add as water to the chickpeas

3. Blend until smooth

4. Combine chickpea puree and box mix, adding a splash of water if required

5. Transfer to baking pan and bake per instructions or until toothpick comes out clean

6. Let cool, then cut & enjoy!


TIP: I found that when I first tried them, I could pick up on a hint of chickpea flavour, but after chilling overnight (or with adding ice cream and toppings), it was no longer noticeable.


You can also do this with a can of black beans instead of chickpeas if you like.

Calories -80 Cal

Protein +0.9

Carbohydrates +6.5g

Fiber +1.1g

Fat -12.4g
