Gluten-Free Vegan Churros (Fried or Baked!) at Home

These churros are crispy on the outside and the perfect combo or pillowy and chewy that you expect from a churro. Plus they’re gluten-free, grain-free, dairy-free, egg-free, refined-sugar-free, vegan & paleo. And you can fry them (traditional way) or bake ‘em (easier, healthier, & less clean up!).

INGREDIENTS=======
Churros:
1/2 cup almond flour
1/4 cup tapioca flour
Pinch of sea salt
1/2 cup water
2 tbsp coconut sugar*
1 tbsp coconut oil
Cinnamon Sugar Coating:
1/4 cup coconut sugar*
1 tsp cinnamon
Chocolate dipping sauce:
1/4c chocolate of choice (vegan, dark choc, ref, sf, etc)*
6 tbsp plant milk of choice
NOTE:*You can easily make them sugar-free (and lower carbs) by subbing the coconut sugar for your fav granulated sugar substitute, and using a sugar-free chocolate for the dipping sauce. The churros do require the starch to get the right texture, so they aren’t keto.
INSTRUCTIONS=======
SUGAR: Prepare your cinnamon sugar by mixing cinnamon & sugar in a bowl or ziplock (I really like it in a bag so you can shake the churros in it to get well coated later)
SAUCE: combine chocolate and milk choice in a microwave safe bowl and heat in 30sec in cements until melted and smooth.
CHURROS:
Combine flours and salt and mix well, then set aside for later.,
Combine water, sugar & oil in a small-medium saucepan and heat until JUST simmer**
Turn off heat, add flour mixture and stir well
Let dough sit 5 minutes to cool enough to handle
Transfer to piping bag fitted with a star tip or ziplock bag with corner snipped off and pipe dough onto parchment lined baking sheet.
Bake in a 400F oven for 10-15 minutes (until nicely golden brown), OR deep fry for 5-7minutes until golden
After they are finished cooking, let cool a minute or two (just enough to not burn yourself handling them, or use tongs), and coat in cinnamon sugar mixture - they need to be hot for the mixture to stick nicely. Alternatively you can brush them with melted coconut oil and toss them in the cinnamon sugar to coat them.
Enjoy warm dipped in your chocolate sauce!
