🍔 Red Lentil Buns | Easy Food Processor Recipe

Here’s a super easy homemade bun/flatbread recipe, made with a few simple ingredients. We’re using red lentils, psyllium husk and baking powder. These are gluten-free, grain-free (if you make your own baking powder like me!), egg-free, dairy-free, and vegan, and packed with nutrients.

INGREDIENTS

•1 cup red lentils (soaked in water for 3-4 hours or overnight)

•1/3 cup water, warm (this helps activate the psyllium husk)

•1/4 cup psyllium husk

•2 tsp baking powder

•1/2 tsp sea salt


FOOD PROCESSOR METHOD:

-Add soaked lentils and water to your food processor & process until smooth (stop and scrape sides as required)

-Sprinkle in psyllium husk, baking powder & salt and blend again until a dough ball forms (a ball will form and start to go around the food processor).


BLENDER METHOD:

-If you don’t have a food processor, blend the lentils and water in a blender, then transfer to a mixing bowl, sprinkle psyllium, baking powder and salt over the mixture and mix until a smooth dough forms (it takes a few minutes for the psyllium to fully hydrate and form a workable dough)


BAKE:

-Divide into 6 buns and bake at 350F for 50-60 minutes (or divide into less, larger buns and bake longer - they will feel lighter when they are baked, similar to the 3-ingredient flax bread)

-Let cool, then enjoy!!

-I like to slice any leftovers in half, and freeze with a small piece of parchment between the bun halves so they’re easy to defrost at a moments notice.
