Making Brooki Bakehouse Cookies at Home | Her real recipe & a Copycat

We love following Brooke & her bakery: Brooki Bakehouse, and have ordered their cookies shipped from Australia not once but TWICE!




So when Brooke recently shared her cowboy cookie recipe on YouTube, we knew we HAD to try it out. We made her OG recipe, and a gf/df version too!


And since we’re baking chunky cookies, why not also try out a copycat recipe by Tastefully Shay that’s supposed to taste just like Brooki Bakehouse Walnut Choc Chip Chunky cookies. Let’s see how close they are, and also make a gf/df version here too.

Since we’re making so many, and these cookies are enormous, we’re downsizing and making 1/4 sized batches (each 1/4 batch made 3’ish cookies - you can do this too if you like, but it’s a bit of a pain to split eggs. You can beat the egg then weigh out a portion. Or some people even divide the white and the yolk separately to get it exact).

**NOTE about me “gluten-ing myself”: I have an inflammatory condition that can flare with certain foods - one of them being gluten. So I do/can occasionally eat bit of things containing gluten, especially when it comes to comparing how certain things taste (to try get textures of gluon-free baked goods more “like the real thing”. Sometimes I do flare after and “pay for it”. It really depends on what it was/how much…

COOKIE #1 REAL Brooki Bakehouse Cowboy Cookie Recipe


RECIPE:

-1 cup salted butter softened/vegan butter/palm shortening**

-3/4 cup brown sugar

-1/2 cup granulated sugar

-3 large eggs

-2 teaspoons vanilla extract

-2 3/4 cup all-purpose flour/gluten-free all purpose flour**

-1 teaspoon baking powder

-1 teaspoon baking soda

-1 tsp cinnamon (we guessed at this amount as she didn’t list it but mentioned a hint of cinnamon)

-1/2 teaspoon salt

-1 cup quick oats

-2 cups milk or dark chocolate chips

-3/4 cup chopped pecans

-3/4 cup unsweetened coconut flakes


**for gf/df simple swap for a df butter sub, and sub gf flour blend


DIRECTIONS:

-Cream butter & sugars

-Add eggs, vanilla,

-Add dry, then choc, oats & nuts

-Divide into 140g portions, or into 12 balls (we guessed here too)

-Freeze at least 2 hours

-Bake at 350F for 22 minutes or until golden (I had to bake both recipes longer than the recommended 12-14 minutes - so start with 12 and check on them.)

COOKIE #2 Brooki Bakehouse Walnut Choc Chip Cookie Copycat by Tastefully Shay


RECIPE:

230g (1 cup) cold unsalted butter/vegan butter/palm shortening, roughly chopped **

380g (2 cups) brown sugar

1 tsp vanilla

2 large eggs, cold

460g (3 1/2 cups) all-purpose flour/gluten-free all purpose flour**

4 tbsp cornstarch

1 tsp baking soda

1 tsp baking powder

450g (3 cups) dark or milk chocolate, chopped by hand

100g (1 cup) walnuts, roughly chopped


DIRECTIONS (same as above):

-Cream butter & sugars

-Add eggs, vanilla,

-Add dry, then choc & nuts

-Divide into 140g portions, or into 12 balls

-Freeze at least 2 hours

-Bake at 350F for ?? minutes or until golden (I had to bake both recipes longer than the recommended 12-14 minutes - so start with a timer for 12minutes and check on them. Some comments on their video said people baked for 18 minutes, or 22-25minutes)
