GF & V 🍓🥥✨ Makes 4 large shortcake wedges These gluten-free & vegan shortcakes are tender & lightly sweet. Serve with juicy macerated strawberries and coconut whipped cream for a classic summer treat. Strawberry Rhubarb Sauce
I only had a few stalks of rhubarb left, so a full crumble was off the table. Instead, I turned them into a simple strawberry rhubarb sauce that's sweet, tart & tastes like summer in a spoon! Serve it over your favourite dairy-free/vegan vanilla ice cream, with a handful of crunchy oat-almond crumble on top. An easy tiramisu-y flavoured no-bake icebox cake. No espresso or ladyfingers required, and perfect for a summer party, get together or picnic. Day 7 of Healthy Summer Treats: 🍋🍨 3-Ingredient Lemon Ice Cream #summeronshorts
INGREDIENTS: - Zest & juice of 2 lemons* - 1 can full fat coconut cream - 1/2 cup sweetener of choice (I used organic honey) NOTES: *I did try the “whole lemon” way first, but I found it too bitter and did not enjoy it. So I remade it using the zest & juice, and it was SOOOOO delicious and refreshing. This will definitely be on repeat this summer. This is fairly heavy on honey but makes for a nice soft texture. You can swap the sweetener or adjust it lower too if you want it
