šŸ‘šŸ„§ Single Serving Almond Flour Peach Cobbler Recipe

It’s gluten-free, grain-free, dairy-free, egg-free, vegan, and potentially low carb (depending on what sweetener you choose - I used allulose)


We picked up a pile of amazing fresh peaches from a local farm market this week (shout out to @thefarmhousemarket) and have been slowly eating thru the basket (slowly as in šŸ‘šŸ‘šŸ‘ at a time, because they’re so good!šŸ§”šŸ˜‹) but I’ve also been enjoying them as an afternoon/after-dinner treat, as a single serve cobbler, topped with melty vanilla bean coconut ice cream on top. I’ve tried MANY versions and THIS one, this one finally nailed it! Absolute perfection. 😘


So here it is:




šŸ‘FILLING

* 1 peach, sliced (peeled if desired)

* 1/2-1 tsp granulated sugar/sweetener of choice (I used allulose), depending on the sweetness of your peach


🄧COBBLER TOPPING

* 3 tbspĀ almond flour

* 2 tsp granulated sugar/sweetener of choice (I used allulose)

* 1 tsp coconut flour

* 1/4 tspĀ baking powder

* pinch sea salt

* pinch cardamom or cinnamon, optional (all 3 are delish in their own subtle way)

* 1 tbsp milk (I used walnut here just because that’s what I had open, but any milk/plant milk will do)

* 2 tsp coconut oil, melted (or vegan butter/butter, if desired)

* 1/4 tsp vanilla


🄣Directions:

-slice your peach (peeled if desired), and add to a small oven-safe bowl, ramekin or baking dish

-toss with 1/2-1 tsp of sweetener of choice if desired.

-combine cobbler ingredients with a fork, and stir until combined. It will look pretty wet.

-transfer to the top of your peach slices

-bake at 325F for 20-25minutes, until golden brown on top

-let cool a few minutes

-top with a scoop of your favourite vanilla bean ice cream

-enjoy warm & melty!!
