☕️🍰Day 27 of Healthy Summer Treats | Tiramisu Icebox Cake

An easy tiramisu-y flavoured no-bake icebox cake. No espresso or ladyfingers required, and perfect for a summer party, get together or picnic.



Ingredients:

► 1 batch of gf/v graham crackers (our recipe is linked below, or use 9-12 of your fav store bought ones)

► 1 cup sweetened df whip cream (our recipe is linked below, or use store bought whipcream of choice, or Coco Whip

► 1 cup df yogurt, unsweetened, plain

► 2 shots of espresso, or 1 cup of coffee, cooled

► cocoa powder for dusting


Steps:

► Combine yogurt & whipcream (taste and see if you want to add 1 tbsp of maple syrup or other sweetener - depending on your yogurt)

► In a loaf-tin sized baking pan/dish (glass is nice so you can see the layers, but you can totally use a metal loaf pan too!) start with a thin layer of your yogurt-whip cream mixture

► Next is a layer of espresso/coffee soaked graham crackers. Just dip them quickly then create your layer over the yogurt-whipcream. You can use a knife, or just roughly snap your crackers into smaller pieces to fill any gaps/holes.

► Continue alternating layers of soaked graham crackers, and layers of yogurt-whip cream, finishing with a final layer of yogurt-whip cream.

► Using a sieve, dust the entire top with cocao powder, then cover and chill in your “ice box” aka fridge for 3-4 hours or overnight, to let the graham crackers absorb the moisture, and soften into a “cake” texture

► Dig in & enjoy!!




Varitions:

►PROTEIN: You could mix some protein powder into the yogurt layer to up the protein and fluffiness

►SWEETENER: If you like things sweeter, you can add some sweetener (eg. 1 tbsp maple syrup, etc) to the coffee soak or the yogurt layer. Our version is lightly sweet, with the focus on the creamy zingy yogurt layer, and the coffee & cocoa.

► SINGLE SERVE: You can make a single serve version using 1/4 cup yogurt + 1/4 whip, 1 graham cracker, and layering it in a jar.
