4 Ingredient Single Serve Protein Cookie

I was feeling like an afternoon snack, and decided to try bake my 4-ingredient protein cookie dough balls into a protein cookie - remember those? I love them as a mix-in in a ninja creami pint.
Simply combine, flatten, and bake. And enjoy for your afternoon pick me up! Each one packs about 18-22g of protein.
Ingredients
2 tbsp almond butter *
2 tbsp protein powder **
1 tbsp liquid sweetener of choice ***
1 tbsp chocolate chips of choice ****
Instructions
Preheat oven to 350°F and line a small cookie sheet with parchment paper.
Mix all ingredients until fully combined.
Shape into ball and gently flatten on cookie sheet
Bake for 11-13 minutes, then let cool fully (the texture changes/improves with cooling)
Enjoy!
NOTES:
* peanut butter or almond butter are both great options for higher protein & lower carbs, but any smooth natural nut or seed butter will work (play around for different flavour combos!)
** if you only have flavoured protein powder, you may want to decrease the liquid sweetener, and sub some water so they don’t end up too sweet
***you can use maple syrup, honey, etc, or use a sugar-free-syrup for keto/low carb
