Black Forest Brownie Cake 🍒🤍🍫

The original recipe for this chocolate cherry brownie cake is by Radhi Devlukia-Shetty in her cookbook: “JoyFULL” (but we made a few tweaks based on ingredient availability at a friend’s house). I’m totally loving the savoury recipes in Radhi’s book, and also make her moon milk recipes almost every night before bed.
So I thought it would be fun to try her brownie cake recipe - It’s gluten free, egg free, dairy free, refined sugar free & vegan. And instead of stacking & “icing” it into a traditional cake. We kept it deconstructed-style so everyone could add their own combination of toppings on their piece of brownie cake. But I stuck to Radhi’s combo of whip cream & cherries. 🍒🤍🍫
1/2 BATCH for 6” PAN
5 medjool dates, pitted
1/4 cup water
2 tbsp maple syrup
1 tbsp plant milk
1.5 tsp melted vegan butter - we used 1/2 tbsp melted coconut oil
1/2 tsp vanilla - we used 1/4 tsp vanilla powder
1.5 tsp ground chia - we used 1/2 tbsp ground flax
1/4 cup sorghum flour
3 tbsp cocao powder
2 tbsp coconut sugar
1/4 tsp baking soda
Pinch sea salt
2 tbsp chopped dark choc - used coconut sweetened chocolate chips
CAKE:
-blend the 5 dates with 1/4 cup water (I boiled the water, and let the dates sit in the boiling water for a bit to soften the dates first,
-add remaining wet ingredients to the blender jar, and blend until smooth
-transfer date mixture to a bowl and add dry ingredients and chocolate chips/ chunks and mix until combined.
-spread into parchment lined 6” cake pan, and bake at 350F for 20minutes.
-if you want a layered cake, let cool 5 minutes, then take the cake out of your pan, re-lined your pan and repeat above to make another layer.
FRUIT COMPOTE:
-we cooked down frozen raspberries, and frozen dark cherries (separately to give people a choice of topping) until cooked & jammy
WHIPPED CREAM:

But we just used a can of spray coconut whip cream to keep it super simple, plus some people chose to add ice cream with/instead.
After prepping all your components, lay them all out family style and have fun constructing your own custom slice of cake, then dig in & enjoy!!
