Ferrero Rocher Energy Balls

These chocolaty hazelnuty no bake oat energy balls will be giving you ferrero rocher vibes, but in healthier oat/granola ball form. They’re also gluten-free, dairy-free, refined sugar free & vegan.
We start by making a chocolate hazelnut oat energy ball, stuff it with a whole hazelnut, then dip it in chocolate hazelnut coating.
Energy Balls
► 1 cup gf quick oats
► ½ cup almond butter
► 6 tbsp maple syrup
► ¼ cup crushed hazelnuts
► ¼ cup ground flax
► 3 tbsp cocao powder
► 1 tsp vanilla
► ½ tsp sea salt
For the Centers
►16 whole hazelnuts
Coating
► 1 cup df/v chocolate
► 1 tbsp coconut oil
► 2 tbsp crushed hazelnuts
Optional Topping:
► sprinkle with crushed hazelnuts
► or flakey sea salt
Instructions
Combine energy ball ingredients in a medium mixing bowl and mix until well combined
Scoop into 16 balls, stuff each one with a whole hazelnut and place int he fridge while you melt your coating
In a heat proof bowl combine your coconut oil and chocolate chips and microwave in 30 second bursts until melted and smooth
Add 2 tbsp of crushed hazelnuts & stir into the chocolate for the classic ferrero rocher look. Dip each ball into the chocolate hazelnut mixture (I like to use 2 forks to let the excess chocolate drip off).
Optional: before the chocolate hardens you can sprinkle with more crushed hazelnuts or with flakey sea salt, then pop into the fridge until set.
