Frozen yogurt bites with raspberry & pistachio!

These choc. dipped yogurt bites have been going viral lately, and for good reason: they're super easy to make, totally customizable, and pretty healthy too.


Here's how we made these ones:


Ingredients:

1 cups plain greek yogurt or plant based yogurt

1/2 cup frozen raspberries (since they’re frozen, they speed the freezing process!!)

1tbsp honey (swap for your fav sweetener instead, or leave out if you use sweetened yogurt)

2tbsp crushed pistachios, plus more for sprinkling

1.5 cups choc chips of choice (we like Healthy Crunch vegan coconut-sugar-sweetened chips)

2 tablespoons coconut oil


Instructions:

1. Combine yogurt, raspberries, honey & 2tbsp pistachios in a bowl

2. Divide mixture onto a parchment lined baking sheet and freeze a few hours (until solid) Using frozen raspberries helps speed this process :)

3. Melt your choc chips & coconut oil in 30sec burst in the microwave, stirring in between, until fully melted.

4. Dip & fully coat in chocolate, then before the choc sets sprinkle with more pistachio pieces

5. Return to freezer until choc is set, and enjoy!

6. Store in an air tight container in the freezer, and let them thaw a little before enjoying as they will be frozen quite solid.
