No Churn Vegan Mint Ice Cream ššØ Dairy-Free | No Machine Required

Last Monday the Shamrock Shake and mint Oreo McFlurry came back!!Ā AND tomorrow is National Mint Chocolate Day, as if you needed any more excuses to treat yourself to a vanilla-mint milkshake, or a mint oreo ice cream treat?!?
If you havenāt heard of them, theyāre seasonal mint-flavoured McDonalds treats for St. Pattyās Day. So nostalgic!! We always looked forward to shamrock shake season as kids. š«¶šš„¤āļø But I canāt do all that dairy anymore, or all that sugar (not to mention what other ingredients are in it) so instead, weāre guna make a homemade, healthier, dairy-free/vegan version. ššš»
Weāre guna start by making a no churn vegan mint ice cream, then we use it to make a vegan Shamrock Shake, and also a vegan Mint Oreo Blizzard/McFlurry.

INGREDIENTS:
āŗ 2 cans full fat coconut milk, chilled overnight, just solid portion
āŗ 1 cup sweetened condensed milk (we used canned coconut milk condensed milk that was sweetened with cane sugar, but you can also easily make your own using your sugar/sugar-sub of your choice, recipe link below ā¬ļø)
āŗ 1 tbsp vanilla extract
āŗ 1 tbsp mint extract (adjust to taste, & add more if you want)
āŗ green food colour: 1 tsp blue spirulina powder & 2 tsp ground turmeric
āŗ 1/2 tsp salt (helps balance flavour but also freezing texture)
STEPS:
1ļøā£ Scoop off solid portion of coconut milk cans. Combine with rest of base ingredients in bowl & whip until smooth and fluffy.
2ļøā£ Pour into loaf pan, cover & freeze 6-7 hours or overnight. š
3ļøā£ Remove from freezer about 20 minutes before serving to let it thaw a bit before scooping.
Enjoy as is. Top with gluten-free oreo crumbs. Or proceed with šāļøš„¤ Shamrock Shake instructions or ššØšŖ Mint Oreo Blizzard/McFlurry instructions in the next video.

In part 1 we made No Churn Vegan Mint Ice Cream that you can use to make our shake, or blizzard. Or simply grab your fav store bought mint ice cream.
SHAMROCK SHAKE šāļøš„¤
āŗ 2 big scoops (1.5c) mint ice cream*
āŗ 1/4-1/3 cup milk of choice (depends on preferred thickness)
1ļøā£ Blender until smooth, transfer to cup
2ļøā£ Optional: whipped cream/choc chips/crushed Oreos**
3ļøā£ Enioy!!
MINT OREO BLIZZARD/MCFLURRY ššØšŖ
āŗ 2 big scoops (1.5c) mint ice cream
āŗ 6-8 gluten-free Oreo/sandwich cookies**
1ļøā£ Chop or crush sandwich cookies
2ļøā£ Stir cookie crumbs into ice cream and transfer to a dish/cup/bowl
3ļøā£ Optional: top with more cookie crumbs
4ļøā£ Enioy!!

I loved the soft-serve-y creaminess, combined with the flavour & crunch of the oreo cookies SOOOO much that I mixed all our leftover ice cream & cookies into McFlurry style to enjoy. :)
