2-INGREDIENT Ice Cream | Coconut Date | No Ice Cream Machine

I’m obsessed with this super simple 2-ingredient coconut date ice cream! It’s dairy-free, egg-free, vegan, refined-sugar-free, date-sweetened, uses just 2 whole food ingredients, and doesn’t require a fancy ice cream machine, or a Ninja Creami (though we’ll include those instructions below too!)

Here’s what you need:
1 can coconut milk (full fat)
160g (7-9 dates) Medjool dates, pitted
Here’s how you make it:
Blend together ingredients in a high speed blender until super smooth
Then freeze per instructions below
1) Do you have an ice cream machine?
-Chill the mixture (in your fridge), then run in your ice cream machine
-Run for 20’ish minutes (per equipment instructions) until frozen
-Enjoy!
2) Do you have a Ninja Creami?
-Pour into Ninja Creami containers (this will fit into one, but I like to split it into two portions) and freeze overnight
-Then remove from freezer, let sit about 5 minutes, then spin on “lite”, & enjoy!!
-I find we don’t ever need to re-spin, but do so if yours needs it.
-Enjoy!!
3) Don’t have either fancy machine? No problem!
-Pour into ice cube trays and freeze overnight (or if you don’t have ice cube trays, freeze it in a thin layer on a lined baking sheet or in a ziplock bag. We just want small’ish pieces.)
-Next day, pop out the frozen cubes, (or break up your frozen sheet) and food process until smooth
-Enjoy!!

CHOCOLATE VERSION:
To make a chocolate version, simply add 2 tbsp cocao powder after dates & coconut milk are blended smooth, then blend again until cocao powder is mixed throughout. (add cocao after the dates are blended because cocao powder will thicken the mix and make it more difficult to get the dates SUPER smooth).
PROTEIN VERSION:
Add a scoop of protein powder when blending dates, and blend again until it’s mixed in
OR after ice cream is ready, mix-in some protein cookie dough (check out our recipe post!)
OR both!!
LOWER SUGAR VERSION:
Use just 4 dates, and add 3 tbsp of sugar substitute of your choice.
