Decadent | Dairy-free | Vegan | Refined Sugar-Free
This fudge is decadent, and super easy to make! No cook, & no thermometer needed!
BASIC 2-INGREDIENT FUDGE:
-1 cup sweetened condensed milk (see note below**; we used our homemade coconut-sugar-sweetened condensed milk here)
-1 cup semi-sweet or dark choc chips (we used vegan coconut-sugar sweetened chips here from Healthy Crunch)
Steps:
Melt in microwave in 30s bursts until smooth, stirring each time
Pour into lined loaf pan (or 8x8 square pan if double batch), and chill until set
Slice & enjoy!
Store leftovers in airtight container in fridge
For the Rocky Road version:
Once melted, add mix-ins.
Stir, spread it into a pan, chill, slice and devour! It’s soooo good.
1 cup peanuts (we used Yupik organic peanuts https://amzn.to/3AAw08K)
2 cups mini marshmallows (we used Dandies vegan marshmallows)
**NOTE: Use canned sweetened condensed milk of your choice (there are vegan/coconut-based ones available now too if you're dairy-free/vegan!!) or make your own following our recipe (link below). If you use canned condensed milk, and don't want to be stuck with a leftover partial can, feel free to double this recipe, to use a full 14oz can, and use 2 cups of choc chips, and an 8x8 pan instead
BONUS: by making your own you can choose your fav sweetener and even make it 100% sugar free by using allulose or your fav sugar substitute.
