Seriously Delicious Cloud Pizza

Gluten-free pizza crust, almond flour crust, cauliflower crust, chicken crust… I’ve tried them all. A pizza crust made from egg whites? Sure, let’s try it!
First you take 2 egg whites and whip them to stiff peaks - I used a hand mixer, and it just took a few minutes. Then you add 1 tsp of tapioca or arrowroot and some spices like onion, garlic, oregano, salt, or anything you like, and beat another 30 seconds.
I spread this out on a parchment lined baking sheet, and baked at 350F for 12-15 minutes, until golden and crispy. At this point it felt a bit like styrofoam, but trusted the process & kept going.
Then I added my toppings and popped it back in the oven for a few minutes until melty & gooey. Guys, this may be my new favourite easy pizza crust - it makes a few dishes, but it was really good. The crust is just there - it’s neutral and supports your toppings nicely.
I’d definitely make this again. Maybe try it with carton egg white next time to see if I can not split eggs and find a use for the yolks later.
Or maybe even aquafaba?? I wonder if that would do the same thing? Let me know if you try it before I do. In the meantime, here is the OG recipe I used:
Ingredients:
-2 egg whites
-1 tsp tapioca or arrowroot
-1/4 tsp each granulated onion, garlic, oregano (or your fav pizza spices)
-1/4 tsp sea salt
Directions:
-whip egg whites to stiff peaks
-add tapioca/arrowroot, your spices, salt, and beat another 30 seconds
-spread out on a parchment lined baking sheet
-bake at 350F for 12-15 minutes, until golden and crispy
-add toppings & bake 3-5 more minutes
-enjoy!!
