Another sweet zucchini recipe, because, let's face it, we're still buried in zucchini over here, and maybe you are too, lol!
These are soft & chewy, gluten-free, dairy-free, vegan, refined sugar free, and so delicious! Packed full of whole oats, chocolate chips and zucchini. Let's make some:
INGREDIENTS
1c gf flour blend
1/2 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon (or just do 1/2 tsp if you want a less strong cinnamon flavour)
1/2c coconut oil, not melted (or use vegan butter)
1/2c coconut sugar (or use brown sugar)
1/2c organic cane sugar (or use vegan white sugar)
1 tbsp ground flax
1 tsp vanilla
1 3/4c rolled oats, not instant
1c zucchini squeezed/blotted
1c choc chips
3 tbsp water, as needed
STEPS
Preheat oven to 350F
Line 2 baking sheets with parchment paper
Shred 1 cup zucchini & pat dry with paper towel or kitchen towel
Beat together oil/butter, sugars, flax and vanilla.
Add flour, baking soda, salt and cinnamon.
Then add flour mixture, and oats, then zucchini & choc.
Add water one tablespoon at a time as needed to get dough to stick together (we ended up using all 3)
Divide dough onto cookie sheet, and bake for 12-14 minutes
Enjoy!!
These are soft & chewy and hold really well in a sealed container at room temp for several days (if they last that long!). If you aren’t a fan of cinnamon, feel free to half the amount or even leave it out.
