Tofu Chocolate Pudding

I’ve have been experimenting more and more with tofu this year, from crispy fried tofu, to dessert applications like this dark & creamy tofu pudding/mousse. It’s super quick and easy to make, and perfect for an afternoon pick-me-up.
Note: pick a chocolate you love the taste of, as it is where most of the flavour comes from.
Makes 4 servings
Ingredients
100g dark/dairy-free chocolate, rough chopped
1 block firm silken tofu
3 tbsp maple syrup
1 tbsp cocao powder
1 tsp vanilla
Instructions
1. Melt the chocolate in 30 second bursts in the microwave, or over a double boiler. Then let cool for a few minutes so it isn’t super hot.
2. Combine all ingredients in a blender and blend until super smooth
3. Transfer to small bowls, ramekins or little jars
4. Chill in the fridge to set.
5. Top with your fav toppings if desired (I like cocoa nibs)
6. Enjoy!
