Mary & Anjee's Oven Baked Falafel Recipe
Last week I flew to Grand Cayman to visit my friend, and she treated me to brunch at the South West Collective (Cafe) on the waterfront in Georgetown, where I ordered “Happy Eggs”, “Life Giving Toast” & Beet Falafel. (I made a YouTube short about it here: https://youtube.com/shorts/fEArBW3fgcI?feature=share ). They were sooooo good it inspired us to make falafel at her house later in the week, not once, but TWICE!! (TBH the first batch wasn’t falafel enough, so we HAD to give

1-Ingredient Red Lentil Wraps (if you don't count water!)
While visiting my friend last week, she really wanted to make some wraps to go with our dinner. She happened to have red lentils on hand, so this is what we made: Ingredients: 1 cup red lentils, rinsed 2 cups water Directions: Combine lentisl & water, and let sit 2-3hours Puree in blender until smooth Cook in oiled pan about 1/3cup to 1/2cup at a time, swirling your pan to get the batter thin (or you can spread it around with a spatula) We found we needed to cook these longer

Sweet Potato "McDonalds Hashbrown" Fritters
I had some frozen grated sweet potato in my freezer that I wanted to use up, so I put these fritters together, and they were so good! BONUS: I froze the leftovers, and they reheat amazingly in the airfryer too!! Here's how to make them: Ingredients: about 4 cups grated sweet potato (I used our food processor attachment) 1/4c almond flour 1/4c cassava flour (or you can sub tapioca or another "starchy" flour here. I just like that cassava is a resistant starch) 2 eggs (or I've

GF/DF Homemade Chicken Nuggets
Come along as we try to gluten-free & dairy-free our favourite chicken nugget recipe (plus some of my ramblings/explanations of how/why I’m doing it a certain way). If you want the exact/original recipe, you can find it in Nick Giovanni’s cookbook: Knife Drop. We’ve been loving everything we’ve made from his book so far, but it’s not gf/df, so we’re going to see if we can convert some of them over for those of us with dietary restrictions, in a new series we’re going to call

Our Gluten Free Stuffing Recipe - Thanksgiving 2023
This recipe was a HUGE hit this Thanksgiving. It was everyone's fav dish, and we all went for seconds and thirds. Switch out the protein to suit your tastes, and make the most delicious and crispy stuffing for your next holiday get together. :) Ingredients: 2lbs ground pork (we used pasture raised ground pork from Brandner's instead of sausages that sometimes have hidden/not-so-clean added ingredients. If you don't eat pork, you can totally sub any other ground meat/meat subs

Gluten Free & Actually Crunchy Battered Fish
Being English, fish & chips was a big part of my husbands' life. We used to have a "fish fry" almost every Sunday evening. But when I went gluten-free, I switched to pan-fried (unbuttered) fish that I would eat when he would do a fish fry. And slowly the fish fry tradition kind of fell away. Now, whenever my parents come to visit, he uses it as a "excuse" to do a fish fry, and I started working on a gluten-free batter. It took a few tries to get a batter that was tasty, and a

Our Favourite Roasted Pumpkin Seeds
Ever wonder what to do with all those seeds (after you've carved your Halloween pumpkins, or made some pumpkin pies)? Every Halloween we try different recipes roasting the pumpkin seeds. This year, this was the winner! We tried several different recipes from adding paprika & garlic powder, to everything bagel spice, to these guys. The secret... white vinegar! These were an attempt to make salt & vinegar flavoured pumpkin seeds (cuz our kids love S&V potato chips). And althoug

DIY Tortilla/Pita Chips Recipe
Sticking with this week's "Creation Giveaway" theme, these make-your-own pita/tortilla chips are so quick & easy, you can make them in your oven in the time it takes to reheat leftover curry/soup. Or use them with your favourite dip or humus!! I don't know about you, but I totally miss corn. I used to put corn in my soups, our chili, and tortilla chips with salsa, dips or guac is just awesome. (And fresh Lafferty's corn on the cob!!! OMG. Don't we have the best corn here in E
