3-Ingredient Flaxbread | Gluten-Free, Keto, Vegan

This gluten-free bread uses just 3 main ingredients, comes together in less than 5 minutes (not including bake time), and has under 0.4g net carbs per slice*.

It’s full of fibre, high in healthy omega 3’s, loaded with vitamins & minerals (including thiamine, copper, iron, potassium), while also low in carbs, gluten-free, grain-free, wheat-free, flourless, yeast-free, oil-free, starch-free, keto, paleo, egg-free, dairy-free & vegan = all the things! It slices & toasts nicely, and is even really tasty as is.

Here’s how you make it.

INGREDIENTS:

-240g (1 1/2 cups) golden flaxseeds

-40g (1/4 cup) psyllium husk powder

-2 tsp baking powder

-1/2 tsp salt

-1 1/3 cups hot water

-Preheat your oven to 350F

-Weigh out your flaxseeds and blend in a high speed blender or spice grinder until fine. Then transfer to medium bowl

-Add remaining dry ingredients & mix.

-Add hot water and mix with spoon until cool enough to kneed with hands.

-Transfer to parchment lined baking sheet. Then wet the top off your loaf with some water and sprinkle with some whole flaxseeds.

-Bake 50-60 minutes until doubled/tripled in size and develops a brown crust.

-Remove from oven, transfer to wire rack to cool completely, then slice and enjoy!

-I sliced this into 10 1/2” pieces, though you could probably slice it thinner and get even more slices (and even lower carb count per slice) depending on how you shape your loaf.

*2 slices per serving, with loaf sliced into 10 slices = 0.87g net carbs per serving (or 0.435g for one slice).
