Almond oat crumble bars, stuffed with a luscious almond cream filling - giving delicious & decadent almond croissant vibes in bar form.
Crumble:
âș1 3/4 cups almond flour
âș1 cup gluten-free rolled oats
âș1/4 cup coconut flour
âș1/2 tsp cinnamon
âș1/4 tsp kosher salt
âș1/3 cup maple syrup
âș1/3 cup coconut oil/shortening/vegan butter, softened
âș1/4 cup almond butter
Almond Frangipane Filling:
âș2 eggs
âș1/2 cup cane sugar
âș1 cup almond flour
âș1/2 tsp sea salt
âș1/2 shortening/coconut oil/vegan butter, softened
âș1 tsp almond extract
Topping:
âș1 cup reserved crumble above
âș1/3 cup sliced almonds
âșpowdered sugar/cane sugar, optional, for dusting the top
Instructions:
Combine crumble ingredients and reserve 1 cup for later
Press rest into a parchment lined 8x8 baking pan, and bake at 350F for 10 minutes, then let cool 5 minutes.
While that bakes, combine filling ingredients and mix until light & fluffy.
Spread filling across baked base layer, then crumble reserved 1 cup crumble over top.
Sprinkle with sliced almonds, then bake at 350F for 40 more minutes.
Let cool, then slice & enjoy!
Optional: dust with powdered sugar for extra almond croissant vibes
