đŸ„Â Almond Croissant Bars


Almond oat crumble bars, stuffed with a luscious almond cream filling - giving delicious & decadent almond croissant vibes in bar form.


Crumble:

â–ș1 3/4 cups almond flour

â–ș1 cup gluten-free rolled oats

â–ș1/4 cup coconut flour

â–ș1/2 tsp cinnamon

â–ș1/4 tsp kosher salt

â–ș1/3 cup maple syrup

â–ș1/3 cup coconut oil/shortening/vegan butter, softened

â–ș1/4 cup almond butter


Almond Frangipane Filling:

â–ș2 eggs

â–ș1/2 cup cane sugar

â–ș1 cup almond flour

â–ș1/2 tsp sea salt

â–ș1/2 shortening/coconut oil/vegan butter, softened

â–ș1 tsp almond extract


Topping:

â–ș1 cup reserved crumble above

â–ș1/3 cup sliced almonds

â–șpowdered sugar/cane sugar, optional, for dusting the top


Instructions:

  1. Combine crumble ingredients and reserve 1 cup for later

  2. Press rest into a parchment lined 8x8 baking pan, and bake at 350F for 10 minutes, then let cool 5 minutes.

  3. While that bakes, combine filling ingredients and mix until light & fluffy.

  4. Spread filling across baked base layer, then crumble reserved 1 cup crumble over top.

  5. Sprinkle with sliced almonds, then bake at 350F for 40 more minutes.

  6. Let cool, then slice & enjoy!

  7. Optional: dust with powdered sugar for extra almond croissant vibes
