Autumn Pumpkin Protein Waffles 🎃🧇

I have been LOVING Autumn Bates' content lately, and if you have been trying to up your protein intake you should check her out too!!

Waffle Batter:
-1 large egg
-1/4c (56g) pumpkin puree
-1 serving of protein powder** (she likes to use 2 scoops of whey protein - if you use a different kind, especially pea protein that likes to absorb more moisture and make things thicker, you may need to add a splash of milk to get the right batter consistancy)
-1 tsp vanilla** if unflavoured protein powder
-1 tbsp sweetener** if unflavoured protein powder
-1/2 teaspoon pumpkin pie spice
Combine waffle batter, and cook according to your waffle maker instructions. With the tiny “Eggo”-sized waffle maker, this recipe made almost 3 full waffles for me. Make sure to spray with cooking spray for EACH waffle as our successive waffles stuck more.
Then top as desired! I topped mine with yogurt, choc chips, walnuts, pumpkin seeds and a little organic honey.
