Chocolate Peanut Butter Brownies (Buckeye Brownies) | GF/DF/RSF

If you thought my cornflake brownies were dangerous, watch out - these small batch buckeye brownies are going to be your new fav treat! They’re gf/df/rsf and combine some of the best things in life: a rich fudgey brownie base, a peanut butter layer that taste’s like a Reese’s, and a chocolate PB ganache with PB swirls.


It’s basically a Reese’s brownie.


BROWNIES

-1 eggs

-1/2 cup coconut sugar

-1/4 cup coconut oil, melted

-1/4 cup almond or oat flour

-2 tbsp + 2 tsp cocoa powder

-1 tsp vanilla

-1/8 tsp sea salt


PEANUT BUTTER LAYER

-3/4 cup almond or oat flour

-6 tbsp peanut butter

-2 tbsp maple syrup

-1 1/2 tbsp coconut oil, melted

-1/2 tsp vanilla extract

-1/8 tsp sea salt


CHOC TOPPING

-1/2 cup df/dark chocolate chips

-2 tbsp peanut butter, plus extra to melt & drizzle swirls


Instructions

► Preheat oven to 350°F and line an 4×8 loaf pan with parchment

â–º Combine egg, coconut sugar & vanilla then add coconut oil

â–º Add almond flour, cocoa powder & salt and mix until combined

► Spread batter in pan & bake 20–25 min

â–º Cool completely

â–º Combine peanut butter layer ingredients in a bowl & spread over cooled brownies. Chill while you prepare the topping

â–º Melt chocolate & peanut butter in a microwave safe bowl in 30 second increments or using a double boiler

â–º Spread the chocolate layer over the peanut butter layer & drizzle with melted PB for decoration

â–º Chill for 2 hours to fully set

â–º Slice & enjoy!!
