Dessert for Breakfast Day 7 🥕🍰 Carrot Cake Overnight Oats



Dessert inspired overnight oats: Day 7 | Carrot Cake Overnight Oats with “Cream Cheese” Frosting


This time we’re making carrot cake using some shredded carrot, coconut & cinnamon; a “cream cheese” frosting layer with yogurt, maple syrup & vanilla; and more coconut, some raisins, and crunchy walnuts as topping!




INGREDIENTS:


Carrot Cake Layer:

-1/3 cup rolled oats

-1 tbsp ground flaxseeds (or use chia seeds, but flax gives it more of a baked-good vibe)

-1/4-1/3 cup shredded carrot

-1/2 serving of protein powder (optional, but I like the added protein to keep me full longer)

-2 tbsp unsweetened shredded coconut

-1/2 tsp vanilla

-1/4 tsp cinnamon

-Pinch salt

-1/2 cup plant milk of choice (we used cashew milk)

-1 tbsp sweetener of choice (we used allulose)


“Frosting” Layer:

-1/4-1/2c plain yogurt of choice (we used 1/2c)

-1 tbsp sweetener of choice (we used maple syrup)

-1/2 tsp vanilla


Topping:

-1 tbsp each raisins, walnuts, & coconut


STEPS:

-Combine carrot layer in a bowl and transfer to your jar

-Combine frosting layer in a bowl then layer on top of carrot layer

-Sprinkle with your topping

-Seal, refrigerate overnight, then enjoy!!
