Gluten-free | Dairy-free | Refined sugar-free | No-bake

Makes: 12-14 energy balls
Ingredients
1 medium carrot/80g of baby carrots
¾ cup walnuts/pecans, or a mix
5 large (about 73g) soft medjool dates, pitted
¼ cup unsweetened/desiccated coconut
½ tsp cinnamon
¼ tsp ginger
pinch of nutmeg
pinch of sea salt
½ tsp vanilla
2–3 tbsp of your choice to bind & adjust texture:
oats (for chewy texture)
almond flour (for a rich, cookie-dough feel)
coconut flour (for a firmer, lower-carb version)
¼ cup desiccated coconut, for rolling
Instructions
Add carrot & dates to a food processor & pulse until finely chopped. Add nuts, coconut, spices, vanilla, salt & pulse again until it starts to clump together. Scrape down the sides as needed.
Add your oats, almond flour, or coconut flour one tablespoon at a time, pulsing between additions, until the mixture holds together when pressed between your fingers. The final texture should be soft and slightly sticky but easy to roll.
Roll into 1-inch balls
Roll each ball in desiccated coconut
Chill for 30 minutes to firm up, or enjoy right away!
✨ Tip:If your mixture feels too sticky, add a bit more of your dry base. If it’s too dry, pulse in a splash of water or an extra date.
