Epic GF/V Magic Bars


These bars were made to be chopped up and put into Hello Dolly-inspired NYC/Chunky/Mega cookies at my GF/DF bakery. But I just HAD to give them a taste test for quality assurance purposes ;) and I thought you might like the recipe too.


I made the base layer from scratch using my homemade graham cracker recipe that you already have, but pressed it into the 8x8 pan instead of rolling them as thin as possible. Next, layer on your fav chocolate chips, some pecans, and finally the “piece-de-resistance”: I swapped the traditional refined sugar sweetened condensed milk for a homemade German chocolate cake filling. It’s a little more work but DEFINITELY worth every extra minute.


And there was extra filling leftover, that I’m freezing into squares that I’ll hide inside each cookie ball too.


Graham Cracker Base:

►2 cups almond flour

►3 tbsp coconut sugar

►1 tsp cinnamon

►1 tsp baking soda

►1/2 tsp sea salt

►1/4 cup maple syrup

►1/4 cup coconut oil, melted

►1 tsp vanilla


Toppings:

►1 1/2 cups df/v chocolate chips

►1 cup pecans

►1 cup shredded coconut


German Choc Cake Filling (caramel coconut pecan filling):

►1/2 can (a scant cup) of coconut milk (mix it well before splitting)

►2 tbsp tapioca flour

►1/4 cup red palm fruit shortening

►1/2 cup coconut sugar

►1/4 tsp sea salt

► 2 tsp vanilla

►1/2 cup pecans

►1 cup shredded coconut


Instructions:

  1. Combine graham cracker ingredients and press into lined 8x8 baking pan. Bake at 350F for 10-12 minutes, then remove and let cool 5 minutes

  2. While your base is baking make the filling: whisk together coconut milk, water and tapioca in a medium sauce pot.

  3. Add coconut sugar and shortening, and whisk over medium heat until it starts to bubble and thickens.

  4. Remove from heat and stir in vanilla, coconut and pecans, and set aside to cool

  5. Sprinkle graham cracker base with chocolate chips and pecans, then top with filling and spread evenly

  6. Bake at 350F for 10-12 minutes

  7. Let cool, then slice & enjoy! (Or do as I did and chop them up and add them to your fav cookies!!)
