Healthier Twix/Millionaire Bars

They are essentially the same thing - just fully dip it and it’s a Twix. Either way it’ a three-layered cookie bar with a shortbread cookie base (almond coconut in our case!), a caramel filling (almond butter date caramel!), and chocolate topping. - with Twix" typically being the American term and "Millionaire's Shortbread" being the traditional UK term for the same dessert.
Cookie Base:
►3/4 cup almond flour
►1/3 cup coconut flour
►1/4 cup coconut oil, melted
►2 1/2 tbsp maple syrup
►1/2 tsp vanilla
►1/8 tsp sea salt
Thick Caramel:
►1/4 cup almond butter
►1/4 cup maple syrup
►2 tbsp coconut oil, melted
►2 medjool dates
►1 tsp vanilla
►1/8 tsp sea salt
Chocolate Topping:
6 tbsp (75g) chocolate chips
2 tsp coconut oil
Flakey sea salt, optional
DIRECTIONS:
Preheat oven to 350F & line a 8x4 loaf pan with parchment
Combine cookie base ingredients & bake 10 minutes, until golden, then let cool
Combine caramel ingredients in food processor or blender and blend until smooth
Spread over cooled cookie base, chill 30-60 minutes until set
Melt chocolate and coconut oil in a microwave safe bowl in 30 second increments and spread over caramel layer
Let sit a few minutes (the chocolate will start to turn from shiny to matte - this is when you sprinkle with flakey sea salt. If you sprinkle too soon (when shiny, it will disappear into the chocolate), if you chill it first or wait too long the salt will not stick.
Chill to set the chocoalte
Remove from pan, then slice & enjoy!!
