Healthy Starbucks Pumpkin Loaf Copycat with Almond Flour

Were you like me, and counting down the days until September? When it’s “ok” to start the craziness of pumpkin recipes & PSLs (pumpkin spice lattes)?!? 😜🎃🍂🧡 I’ve got an amazing healthy recipe for a Starbucks pumpkin bread/cake dupe, that you can eat guilt-free!!


It’s gluten-free, dairy-free, refined sugar-free/paleo, oil-free, and even pretty low carb. All the things! YET so moist and tender and PACKED with flavour. I had to stop myself from eating the entire loaf for my breakfast…

INGREDIENTS:

  • 1 cup pumpkin puree (not pie filling)

  • 3 eggs

  • 1/2 cup maple syrup

  • 1 tbsp vanilla

  • 3 cups almond flour

  • 1 tbsp pumpkin pie spice*

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt


TOPPING:

  • pumpkin seeds (but crushed pecans or choc chips would be great too!)


HOW TO:

  1. Combine wet, add dry.

  2. Pour into parchment lined loaf pan

  3. Bake at 350F for 50-60 minutes (when a toothpick comes out clean).

  4. Then let cool for 20 minutes before slicing. And enjoy!! And just TRY not to eat the whole thing… lol.

  5. Store leftovers in an airtight container for up to 3 days (or freeze some for an easy snack later!).🙌🏻😉
