Pumpkin Cinnamon Sugar Donuts

It's day 3 of our new Fall Into Shorts series, and today we're making pumpkin spice donuts, covered in an irrisistable pumpkin spice-coconut sugar coating.

Makes 8-10 donuts
Ingredients:
2/3 cup pumpkin puree
1/3 cup maple syrup/liquid sweetener of choice
1/4 cup olive oil/avocado oil/melted coconut oil
1 tbsp apple cider vinegar
2 tsp vanilla
1 1/2 cups almond flour
2/3 cup tapioca/arrowroot flour
3/4 tsp baking soda
1 tbsp pumpkin pie spice*/cinnamon
Pinch of sea salt
Pumpkin Spice Sugar:
3 tbsp palm shortening/vegan butter/coconut oil, melted
3/4 cup coconut sugar/sweetener of choice
1 tsp pumpkin pie spice*/cinnamon
Steps:
-whisk together wet ingredients
-add dry & mix to combine
-pipe into greased donut pans**
-bake at 350F for 17-20 minutes
-let cool, then remove from pans
-mix together topping (coconut sugar & pumpkin spice) in a small bowl
-dip cooled donuts in melted shortening/butter/oil, then roll in spice/sugar mixture
-enjoy!!
