Pumpkin Pie Ice Cream/Popsicles

POV: love my Creami and now it’s PSL season ➡️ 🎃🥧🍨

I couldn’t wait for cozy fall flavours but I’m not ready to pack away my Ninja Creami quite yet…
So let’s make pumpkin pie ice cream!! This is basically our deconstructed paleo pumpkin pie in ice cream form. We start with our 2 ingredient coconut date ice cream*, add extra pumpkin pie ingredients, and then crunchy cookie mix-ins to complete the perfect pie vibe.
WITHOUT A CREAMI: you do NOT need a ninja creami - you can follow the alternate steps in our 2-ingredient ice cream video and freeze it in ice cube trays, pulse in a food processor until smooth, then add in your cookie crumbles of choice.
CREAMI INGREDIENTS:
►1 can full fat coconut milk
►8 medjool dates, pitted
►1/2 cup pumpkin puree
►1-2 tsp pumpkin pie spice** (I used 2 but I LOVE cinnamon)
►1 tsp vanilla
►1/8 tsp salt
“PIE CRUST” MIX-INS:
►gf biscoff cookies***, gf graham crackers****, a gf cereal, or even crushed pecans or granola for crunchy pie crust vibes

DIRECTIONS:
►Combine all ingredients except “pie crust” mix-ins into a blender or blender jar and blend until smooth
►Transfer into ninja creami pints if you have a creami. You can fit this into one pint, but if you do not plan to each the entire pint in one sitting, split the batch into 2 or more tubs since you don’t want to re-spin leftover ice cream with mix-ins (they get fully pulverized/incorporated and you’ll need to add more). I’m splitting mine into 2 pints.

►ALTERNATE: freeze it in ice cube trays, pulse in a food processor until smooth, then add in your cookie crumbles of choice. And Enjoy!!
►Freeze overnight
►Spin on light ice cream mode
►Add broken cookie pieces into middle of pint (dig a hole with a spoon first if there is no room) and run on “Add mix in” mode
►Enjoy!!
NOTE: if you do not intend to eat/share the full pint in one sitting, it’s best to split this into 2 or 3 Creami pint containers (before freezing or after the first spin). OR transfer spun ice cream into popsicle molds to freeze!! If you refreeze leftovers & respin the pint, your mixins will be obliterated.
