🤎❤️🤍 Layered Choc Strawberry Chia Pudding Without the Wait 🤎❤️🤍

With the warm spring weather here, I find myself leaning away from my cooked keto porridge I ate on repeat all winter and feeling more like a chia pudding.


One of my favourites I’ve made today with a couple of tricks, you can get rid of that 3+ hour wait you normally need for a chia pudding to thicken and you can make it for breakfast that day.



This is going to be a layered chocolate vanilla chia pudding that I’m adding some strawberries too, but you can also mix it up and do some banana or you can add some peanut butter to your vanilla layer and make it like a peanut butter cup that would be super delicious too!!


The hack here is to use HOT water and less of it  (I took hot water from our espresso machine - so hot, but not quite boiling). It helps the chia seeds gel much faster, letting you skip the usual wait time.


This one is chocolate chia pudding layered with fresh strawberries, a protein yogurt layer, and crushed hazelnuts & chocolate on top. A match made in heaven. But you can also mix it up and do some banana or you can add some peanut butter to your vanilla layer and make it like a peanut butter cup that would be super delicious too!!


Though I wish my layers turned out prettier, this was so super good! AND I didn’t have to wait 3 hours for it. 😉🙌🏻


⬇️ INGREDIENTS ⬇️


🤎Choc Chia Pudding

  • 1/4c hot water*

  • 1 tbsp cocao powder

  • 2 tbsp chia seeds

  • 1 tbsp sweetener of choice - I used maple syrup

  • 1 tsp maca powder (optional, but great adaptogen & hormone support)

  • pinch sea salt


🤍Protein Yogurt Layer

  • 1/4 cup plant yogurt of choice

  • 1/4 cup plant protein powder of choice

  • 1 tbsp sweetener, optional/to taste depending on your yogurt & protein powder - I used allulose


🩷Fresh Strawberries

  • 1/2 c fresh strawberries


🤎Toppings

  • Crushed hazelnuts

  • Chopped chocolate of choice (I chopped up some coconut-sugar-sweetened vegan chocolate chips)


*using hot water will “bloom” your cocao powder AND gel your chia faster

🤎Choc Chia Pudding

-Combine all your ingredients, making sure to use hot water, and stir until combined & set aside.


🤍Protein Yogurt Layer

-Combine all your ingredients, stir until combined & set aside.


🩷Fresh Strawberries

-Wash, hull, and slice


🤎Toppings

-Rough chop your toppings


Assembly:

-Grab your fav glass or jar, and start layering!

-You can add half the chocolate layer first, then the vanilla layer, some strawberries, nuts & choc chips, then repeat!

-Or for thicker/more distinct layers, add all of your chocolate, then vanilla layers, then all your toppings.

-Dig in & enjoy! You don’t need to wait 3hrs for this chia pudding to thicken. :)
