Nuts & Seeds Cookies

Let’s try another recipe that has been all over my YouTube fyp recently, stating “I don't eat sugar! Healthy cookies without flour or sugar! Energy dessert recipe!”



Looking at the ingredients, they are basically a bunch of mixed nuts & seeds held together with a bit of honey. And some are dipped in dark chocolate. So what’s not to like about that? (Unless you don’t eat honey - then try this with your favourite sticky sweetener instead).


After trying them out, I have to say, these healthy no-sugar-added nut & seed “cookies” are like oat-free granola bites (nut’ola?) in cookie form dipped in dark chocolate. We should really call these “Kind Bar Cookies”. They’re super easy to make, and in endless custom combinations: you can mix it up and choose whatever nuts/seeds & dried fruit you’re loving at the moment.


And switch up the chocolate, or leave it out completely (they’re delicious on their own!). We all really enjoyed these. I did have a couple break apart, but I have been enjoying them crumbled on my morning yogurt/chia bowl like a granola. So good!!

All you need is a mix of nuts, seeds and/or dried fruit, and a little bit of honey to get it to stick together. Here’s the basic recipe (for exact nut/seed quantities we used in the video see notes below):


INGREDIENTS

2 3/4 cups nuts, coconut, seeds & dried fruit (**see tips below)

1 tbsp flaxseeds

1 tbsp sesame seeds

1-2 tbsp honey

Pinch sea salt


OPTIONAL:

Dark chocolate

Flakey sea salt


Combine your nuts, seeds, dried fruit & salt in a bowl.


Add 1 tbsp of honey, and mix well. If the mixture is sticking together well, proceed to traying your mixture. If it seems a bit dry still, you can add another tbsp of honey, then mix again.


Line a baking sheet with parchment paper, then use a ring mold or simple cookie cutter to portion your mixture, making sure to firmly press them down so they stick together well.


If you use a 3” cookie cutter like I did, and 1/4 cup scoop to portion out you mixture, you can make 12 cookies that are each about 1/2 inch thick.


You can use your spatula to press down or use the bottom of a measuring cup/glass sprayed with oil or wrapped with plastic so the mixture doesn’t stick.


After you’ve portioned it all out, bake at 300F for 15-17 minutes, until edges are starting to turn golden brown.


Let cool completely so they harden & can be picked up without breaking apart.


Enjoy as is or melt some dark chocolate, and half dip or drizzle your “cookies” in chocolate. Also optional: sprinkle with flakey sea salt if you love a sweet & salty flavour combo. Then place dipped cookies back on your parchment lined tray and pop in the fridge until chocolate is set.


Then dig in & enjoy!!





=====NOTES==============


**TIPS: for best results you want a mix of nut/seed sizes. Some whole nuts adds fun texture, and smaller seeds/chopped nuts help them hold together. This is also a great way to use up last little bits of ingredients you have.


THE NUT QUANTITIES WE USED IN THE VIDEO:

1/3 cup sunflower seeds

1/3 cup coconut chips

1/3 cup crushed pecans

1/3 cup hemp hearts

1/4 cup pumpkin seeds

1/3 cup sliced almonds

1/3 cup walnut pieces

1/4 cup cashews

1/4 cup whole almonds

1 tbsp flaxseeds

1 tbsp sesame seeds

2 tbsp honey

Pinch sea salt



Other nuts/seeds/dried fruit you can use:


NUTS: walnuts, hazelnuts, peanuts, cashews, pecans, Brazil nuts - roughly chopped, macadamia nuts, almonds (whole and or sliced), etc


SEEDS: pumpkin seeds, sunflower seeds, black and/or golden sesame seeds, flaxseeds, chia seeds, hemp seeds, etc


DRIED FRUIT: cranberries, raisins, currants, cherries, orange, apricot, goji berries, etc
