Lazy Cookie Dough Energy Bars | No Bake Chocolate Chip Granola Bars

Forget rolling energy balls — just press your mix into a pan instead! Chill, slice, and you’ve got easy Cookie Dough Energy Bars that are gluten-free, dairy-free, and no-bake. 🍫💪
Dry Ingredients:
1¼ cups rolled oats (use GF-certified)
1 cup unsweetened dried coconut
½ cup dairy-free chocolate chips
¼ cup ground flax
½ tsp sea salt
Wet Ingredients:
½ cup almond butter (or any nut/seed butter)
6 tbsp maple syrup (plus more if needed)
1 tsp vanilla
Optional Boost:Add 1–2 scoops protein powder or collagen, plus a splash more syrup or water to help it bind.
Instructions:
1️⃣ Pulse dry ingredients in a food processor until oats & chips are slightly broken up.
2️⃣ Add wet ingredients and pulse again until mixture sticks when pressed.
👉 If too dry, add more syrup 1 tbsp at a time.
3️⃣ Press into a parchment-lined 8x8" pan.
4️⃣ Optional: drizzle with melted dark chocolate or our no-cook caramel sauce.
5️⃣ Chill 20+ minutes, slice into bars, and enjoy!
Tip: Store chilled for grab-and-go snacks all week.
