Coconut Almond Nut Bars | Grain-Free Granola Bars

Makes: 10 bars with silicone granola bar mold
NUTS
1cup sliced/slivered almonds*
1/2cup walnuts, roughly chopped*
1/2cup large coconut flakes (aka “coconut chips”)
1/2cup desiccated coconut
*you can sub these for your fav nut/mixture of nuts - this is just my base recipe
HONEY MIXTURE
1/2tsp cinnamon/pumpkin pie spice (I used our pumpkin pie spice mix)
1/2tsp vanilla
1/4tsp salt
2tbsp coconut oil
1tbsp coconut butter (I used our DIY coconut butter)
1tbsp almond butter
3tbsp honey
DRIZZLE, optional
1/4c (43g) chocolate chunks
Scant 1tsp coconut oil
►Combine nuts in a large bowl.
►Combine honey mixture ingredients into a small-medium pot.
►Heat & whisk until melted & smooth.
►Pour over nuts & stir until combined.
►Press into silicon molds OR a parchment lined loaf pan
►Bake 325F for 15 minutes.
►Let cool fully before removing from molds. Chill to speed cooling.
►Pop bars out of molds and drizzle with melted chocolate.
►If using loaf pan, remove from loaf pan, and cut into bars,
►Combine chocolate and coconut oil in a small heat proof bowl and microwave in 30sec bursts until melted & smooth
►Drizzle bars with melted chocolate.
►Chill to set the chocolate, then enjoy!!
►Store leftovers in the fridge to keep the chocolate firm.
