Peanut Butter Balls | GF • DF • Vegan • Better-For-You



Peanut butter balls were always my favourite cookie in our Christmas box growing up — but they were loaded with icing sugar 😅


This version is naturally sweetened, nutrient-dense, and totally guilt-free.


Customizable & flexible

• Swap walnuts for any nut you love

• Use peanut, almond, or your favourite nut butter

• Sub puffed quinoa for crispy rice

• Or use crushed cornflakes for a Butterfinger-style twist 😍


Makes 16


Filling

• ½ cup crispy rice (make sure your brand is gf & v)

• ¼ cup walnuts, finely chopped

• ¼ cup maple syrup

• ⅛ tsp sea salt

• ½ cup peanut butter

• ½–1 tbsp coconut flour (as needed)


Chocolate Coating

• ½ cup df/v chocolate of choice (we used coconut-sugar dark chocolate to keep it naturally sweetened & df/v)

• 1 tsp coconut oil


Optional Toppings

• Finely chopped nuts

• Flaky sea salt

• Extra chocolate drizzle


How to Make

1️⃣ Mix cereal, walnuts, salt, and maple syrup

2️⃣ Stir in nut butter until combined

3️⃣ Add coconut flour ½ tbsp at a time (let it absorb!)

4️⃣ Chill 20 minutes

5️⃣ Roll into ~1 tbsp balls

6️⃣ Chill again (2 hrs fridge or 20 min freezer)

7️⃣ Melt chocolate + coconut oil

8️⃣ Dip, decorate, and chill until set

✨ Enjoy!


Store sealed in the fridge (1 week) or freezer (1 month)
