No gluten, no dairy, no refined sugar — just creamy, dreamy, blueberry cheesecake perfection. Equipment: 6” springform pan or cake ring with bottom wrapped in foil INGREDIENTS Crust: -1/2c pecans -1/2c almond flour -4 medjool dates, pitted -1 tbsp coconut oil, melted -pinch of sea salt Filling: -1 1/2 cups cashews, soaked overnight then drained & rinsed -1 cup coconut cream (from top of a can of full fat coconut milk that has been chilled overnight) -1/2 cup maple syrup -zest

Don’t like the texture of overnight oats? Try blended baked oats instead! They taste like a brownie! You simply combine everything in a blender, then bake it for a cozy, easy, chocolatey breakfast. And I’ll tell you a secret - I also tried it swapping out the oats for almond flour & I thought it was EVEN yummier!! It’s almost like eating cake for breakfast. Easy Almond Flour Crackers #glutenfree #vegan
We’re making these today, because it’s July 25, aka Christmas in July, aka an excuse to make holiday recipes like Christmas crack!! (Watch for part 2 for that recipe!) 1 1/2 cups almond flour 2 tbsp olive oil 2 tbsp water 1/4 tsp sea salt Xanthan is optional: you can add 1/4 tsp here for stronger crackers.
