šāØ Forget sneaking your kidsā Halloween candyĀ āĀ make this grown-up treat instead! Weāre turning the classic Twix candy bar into gluten-free, dairy-free, vegan, and refined-sugar-free cookies.šŖ
We start with a buttery crisp shortbread base, a super easy creamy no cook almond butter caramel, a layer of dark chocolate and some flakey sea salt to finish them off. Itās that easy ā and SO good.
Perfect for cozy fall baking or a Halloween candy glow-up. š»š These are next-level ā try to eat just one. š

Almond Shortbread Cookie
Makes: 7-10 cookies
3/4 cups (84g) almond flour
1 tbsp (6g) coconut flour
2 tbsp coconut oil, melted
2 tbspĀ maple syrup
1/2 tsp vanilla
small pinch seaĀ salt
āŗCombine, then chill for 20+ minutes to let coconut flour hydrate
āŗRoll between parchment to 3/16in to 1/4in thick*, & cut into circles**
āŗBake 350 for 10-12min, until edges are golden brown
āŗLet cool
No Cook Almond Butter Caramel
3 tbsp almond/cashew butter
2 tbsp maple syrup
2 tbsp coconut oil, melted
1/4 tsp vanilla
pinch sea salt
āŗStir together, and spread on cooled cookies
āŗChill to set
Topping
1/4 cup df/v chocolate of choice
1/4 tsp coconut oil
flakey sea salt
āŗMelt chocolate & coconut oil in 30 second burst in the microwave
āŗTop cookies with melted chocolate & flakey sea salt
āŗ(Chill until set) Enjoy!
NOTES:
*thinner cookies will bake crisper, give you more cookies, and IMO give you a better cookie to topping ratio.; while thicker cookies will be chewier, give you less cookies, and have a higher cookie to topping ratio.
**we used a 2.5 inch circle cutter & got exactly 7 cookies - we baked ours for 11 min
